Nicolas Guercio, Executive Pastry Chef at the Mandarin Oriental Lutetia, Paris, created this piece in honor of the Lutetia's mascot puppy. This trompe l'oeil creation is as touching as it is surprisingly realistic, made entirely from Valrhona Manjari 64% dark chocolate by the company's in-house chocolatiers.
