This year, Pastry Chef Nicolas Guercio presents an enchanting and indulgent Light Yule log. A true pastry masterpiece, this original dome-shaped creation reinterprets the traditional Christmas log.
An elegant and poetic creation, it combines a grapefruit biscuit, an infusion of organic Nepalese black tea, and a smooth Tahitian vanilla mousse, encasing a vibrant citrus compote blending candied grapefruit peel, bergamot confit, and Buddha’s hand marinated in vanilla.
The whole is crowned by a delicate white chocolate dome, finely adorned with copper-toned lithophane motifs of Paris. Thanks to its built-in light, the Yule log illuminates and reveals a magical theater where the City of Light comes to life.
