This year, Pastry Chef Nicolas Guercio presents a magical, gourmet Yule log: called Snowflake. A veritable pastry masterpiece, this original creation in the shape of a six-pointed star revisits the traditional Mont-Blanc.
Resting on a delicate sweet dough, the log reveals a chestnut cookie and a smooth chestnut cream, enhanced by a tangy blackcurrant confit subtly spiced with Timut pepper. Each bite offers a perfect balance of crunch, sweetness and freshness. The whole is wrapped in an airy chestnut mousse, topped with puffed meringue and covered with white chocolate, evoking freshly fallen snow.
At the heart of this dessert lies an unexpected surprise: a Christmas music box playing a festive melody as the flake stars twirl, made of candy sugar, white chocolate and sugar paste, adding a touch of enchantment to this exceptional creation.
